Try sweet cottage cheese toast for a healthy breakfast!

Rok and I were talking about school the other day. We’ve both been out of Uni for a few years now and it’s amazing how life changes when you’re done with it. We went from having days filled mostly with school to not thinking about it at all.

I don’t really miss it, I don’t miss the teachers (with one or two exceptions) or the work, but sometimes I do miss the simplicity of it. Saying that is kind of an oxymoron, as the word simple and school don’t really go together and “simple” was never a part of my school vocabulary.

Nothing seemed simple back then, but now when I look at it, it actually was in a lot of ways. School filled the majority of my life, of all our lives and very little time was left for anything else. And knowing what you have to do every day is simple. We had a job to do and while it seemed hard at the time, it really wasn’t.

Rok and I talked mostly about primary school and ended up talking about breakfast at school. Because whatever the age, food is important for everyone. And while everyone says breakfast is the meal of the day and I, as an adult, agree, back in those days I didn’t think of it as such. It was only socially the most important part of our school days. Those 25 minutes were spent chatting, gossiping, doing homework for Math, making plans for after school. Eating came second.

We obviously both had our favorites as kids, and since we didn’t go to the same school our breakfast options weren’t entirely the same, but here’s what I remember about mine:

I hated the days when they gave us ham for our sandwiches, instead of the tuna spread. I didn’t mind eating ham at home, but the smell of ham served at school still haunts me to this day and I cringe just thinking about it. The tuna spread was really good though.
I didn’t like it when they gave us milk to drink, I always preferred cocoa or at least tea, but juice was my favorite.
At the time, I didn’t like bread with butter and honey, but I like that now.
I did however love pizza. We didn’t get it that often, but when we did, I was very happy. And so was everyone in my class.
I also loved chocolate pudding.
And I loved cottage cheese with grapes and fresh white bread that came with it. Not everyone was a fan of that, but I really liked it. Obviously, because that is where today’s recipe comes from.

From the minute I remembered this during our conversation, I could not get it out of my head. I adore cottage cheese. I’ve mentioned my love for it on the blog too, but it’s actually been a while since I’ve had it (unless baked in a dessert).

I used to have a few tablespoons for breakfast almost every day and then I just stopped. I don’t really know why, but as mentioned on this blog often, I go through phases with my breakfast and I guess I just dropped cottage cheese for something else one day.

Well, the baby is back now! And oh my, do I love it. Cottage cheese with fruit and some honey is just so good I can (and often do) eat it on its own. Spread over toasted bread, it’s even better. Because bread is bread and is great on its own too, especially when toasted. (See, I could play this game all day.)

Back to the point, which is that this breakfast is really great. It’s filling and has a bit of everything you need to start the day properly. I love to add chopped almonds, because I haven’t  been eating enough nuts lately and this is a very easy way for incorporating some.

Sweet cottage cheese toast with grapes
 
Start your day like a champion with this sweet cottage cheese toast, topped with grapes, almonds and honey.
Recipe makes 4 slices.

Ingredients
  • 250g (0.5 pound or 1 cup) smooth cottage cheese
  • 1 teaspoon granulated sugar
  • 1 teaspoon honey, or more to taste
  • 4 slices of white bread
  • 200g (about 7oz or 1 cup) grapes, halved
  • a handful (about 1/2 cup) almonds, roughly chopped
Directions
  1. Toast the bread in your toaster until golden brown.
  2. Meanwhile, in a small bowl, whisk together the cottage cheese, sugar and honey; until smooth and creamy.
  3. Let bread cool just a tiny bit, so it's not hot, and spread cottage cheese all over.
  4. Lastly, place the grapes on each slice, as many as you can and sprinkle with almonds.
  5. Additionally, you can drizzle extra honey over the grapes.
Notes
You don't have to add any sugar to your cottage cheese, but I think a tiny amount really improves the taste.

I prefer smooth cottage cheese for spreads and regular cottage cheese for baking, but use whichever you have on hand.

If you don't like grapes, blueberries or strawberries are a great alternative.

Store any leftover cottage cheese in an airtight container in the fridge and use within 1-2 days.
