June really creeped up on me. And the first half went by so fast I’m seriously wondering if days suddenly only last 12 hours? Because truth be told, I’d love it if a day had 36 hours… not 24. Anyway, I thought I’d remind everyone of my favorite indulgent summer drink – this ice cream iced coffee with whipped cream.

While I was gone I finally got mu hair done. Speaking of my haircut – I know most people won’t notice the change as I’ve only cut it shorter, but the hair is still long. I’m thinking about going back and cutting off another inch. If not for a cut, I want to go back just because the salon has air conditioning and the scalp massage Katja does while washing my hair is so amazing I kind of want to move in there. Those two hours were seriously the best two hours of the whole week.

I shared a vegan iced coffee recipe a while back, so I apologize if I seem repetitive to anyone. But these days I’ll take anything that’s cold and besides water and iced tea, iced coffee is a big, big favorite.

If you sat down at a cafe in Ljubljana and ordered iced coffee you would be asked two questions:

With or without whipped cream?

Chocolate or vanilla ice cream?

Some cafés won’t even give these questions, you’ll just get the magnificent big ice cream iced coffee placed in front of you. (Although there are certain newer places that offer a chilled espresso with a splash of milk, which is my normal go-to caffeinated drink.)

But… that is how things are done around here. Iced coffee is served with ice cream and whipped cream. Usually also with some chocolate sauce and a wafer roll. If the place is really trying to put you in a sugar coma, you might even get 2 scoops of ice cream. An adult version often includes a splash of rum too. That’s a lot of stuff in one glass. Doesn’t it sound amazing though? Don’t you just want one right now?

This ice cream iced coffee is a real classic. It’s made with chilled strong coffee,  2 scoops of vanilla ice-cream, topped with fresh whipped cream, wafer sticks and cocoa.

And while iced coffee is a beverage, this iced coffee is really more of a sweet snack. But definitely one worth having.

Ice cream iced coffee with whipped cream

Decadent iced coffee with vanilla ice cream and whipped cream.
Recipe makes 2 very large coffees or 4 smaller ones (that are still quite filling)

Ingredients

Scale
  • 240ml (1 cup) whipping cream
  • 1 tablespoon powdered sugar
  • 500ml (1 pint) vanilla ice cream
  • 500ml (2 cups) chilled strong coffee (turkish, espresso, instant or any of your choice)
  • 2 tablespoons rum (optional)

For decoration:

  • sweetened cocoa powder
  • wafer sticks
  • sprinkles

Instructions

  1. Pour the cream in the bowl of your electric mixer, add the sugar, and whisk the cream on medium speed until firm peaks form. Set aside.
  2. Place 1-2 scoops of ice cream in a glass. Pour over up to 250ml (1 cup) of coffee (adjust amount to your preference). Top with a big dollop of whipped cream, decorate and serve immediately.

Notes

If you want to be prepared ahead of time, you can make the coffee a day ahead and chill it in the refrigerator.
You can also make the whipped cream ahead of time, if usinga whipped cream dispenser. Cream made with that is SO easy to make and use and it last in the fridge for 2 days.

FLAVOR OPTIONS
While vanilla is a classic choice, other popular ice cream flavors for this coffee are: chocolate, hazelnut, caramel, coconut.

You can also use different types of syrup to add more flavor or to sweeten the drink (although the ice cream is usually enough).
